Texas Beef Stew Recipe
No matter where you are or what season you’re in, a hearty beef stew is a hard meal to beat! Check out this recipe that skips some of the more calorie-costly ingredients for a heaping helping of protein and taste!

Ingredients
3 lbs lean beef stew meat
½ cup pieces turkey bacon
1 cup chopped onion
3 cloves garlic
1 ancho chili pepper
4 cups water
1 cup pieces or slices white mushrooms
¾ cup chopped tomatoes
3 Tbsp chili powder
1 tsp cumin
1 tsp coarse kosher salt
Directions
1. Cut meat into 1-inch cubes and sprinkle with salt.
2. In a large saucepan, sauté bacon until lightly golden and set aside.
3. Add onions and garlic to saucepan. Sauté until softened but not brown and set aside.
4. Coat pan with cooking spray. Add beef and brown, cooking in batches so the pan is not crowded.
5. Add bacon, onions, garlic, and mushrooms as well as chili powder, cumin and chili pepper, stirring well.
6. Add tomato and water then reduce heat.
7. Cook over very low heat for 2-1/2 to 3 hours or until meat is tender and falling apart, stirring occasionally.
