Spinach Salad Recipe
Here’s a tasty salad recipe that’s full of flavor and low on calories! This spinach salad is the perfect midweek lunch.

INGREDIENTS
7oz. fresh baby spinach
1/4cup white vinegar
1/4cup water
1/3cup Dijon mustard
3tbsp. Splenda
10 slices Oscar Meyer Turkey Bacon
1/4cup chopped red onion
2 minced garlic cloves
1/2cup fresh sliced mushrooms
2 hard boiled eggs
DIRECTIONS
1. Place spinach in large bowl, removing stems.
2. Dressing – blend together vinegar, water, mustard and Splenda in a bowl.
3. Slice bacon into small strips. Place in a pan and fry over medium heat until crispy.
4. Add onion, mushrooms, and garlic to pan. Continue cooking over medium heat for 1-2 minutes.
5. Add the dressing mixture and simmer for 1-2 minutes. Pour over spinach; toss well.
6. Cut the egg into thin slices and add to salad. Serve warm.
