MEDI Approved All-American Cookout

Making good food choices doesn’t mean you have to miss out on all the fun of the holidays! With Independence Day coming up, we wanted to give you some great food ideas for your cookouts or parties. These are some classic cookout recipes with a healthy twist!

 

HEALTHIER DEVILED EGGS
Makes 24 Halved Eggs
Serving Size – 2 Halves
Calories – 86; Fat – 6g; Carbs – 1g; Protein – 7g.  

Ingredients:
12 Large eggs (boiled)
1/2 cup Cottage cheese 2%
1 Tbsp Dijon mustard

Place eggs in large pot and cover with water.  Bring to a boil and continue boiling for 15 min.  Drain boiling water and run cold water over eggs.  Cool for 30 min.  Remove yolks and place in small bowl.  Mash yolks with fork and stir in cottage cheese, mustard, and salt and pepper to taste.  Spoon the mixture into the egg whites, chill, and serve.

 

GRILLED CHICKEN WINGS
Makes 24 Wings
Serving Size – 3 Wings
Calories – 144; Fat – 10g; Carbs – 3g; Protein – 11g.

Ingredients:
1 pkg. McCormick Grill Mates Zesty Herb Marinade
1/2 cup Olive oil
1/4 cup Reduced sugar ketchup
2 Tbsp Hot pepper sauce
3 lbs Chicken wings

In a bowl, mix marinade, oil, ketchup, and hot pepper sauce until well blended.  Add wings and toss.  Chill for 1 hour.   Remove from refrigerator and place on preheated grill, cooking until internal temperature reaches 165 degrees F.

 

MOCK POTATO SALAD
Makes 2.5 Cups
Serving Size 1/2 Cup
Calories – 86; Fat – 1g; Carbs – 17g; Protein – 4g.

Ingredients:
1 Large head cauliflower
3 stalks Green onions, tops only
1 medium Green pepper
2 small Celery stalks
1 Tbsp. Lemon juice
1/2 cup Kraft Miracle Whip free
1/4 cup Fat-free sour cream
2 tsp Mustard seed
2 Tbsp Cider vinegar
1/2 tsp Salt
1/2 tsp Ground black pepper

Chop onion, bell pepper, and celery.  Combine and set aside in large bowl,  Cut florets from cauliflower; then steam cauliflower for 4-6 minutes, just until tender but not mushy, and let cool.  Add cauliflower to vegetable mix.  In a separate bowl, combine the Miracle Whip, sour cream, lemon juice, cider vinegar, mustard seed, salt, and black pepper.  Coat cauliflower mix with dressing and stir.  Chill until ready to serve.
