Cauliflower “Mac” & Cheese
Besides being packed full of vitamins, cauliflower has an amazing ability to take on just about any texture and flavor you can think of! Use this recipe for Cauliflower Mac & Cheese for a low-carb alternative when the comfort food cravings hit.
Ingredients
1 head (large) cauliflower
⅓ cup chopped onion(s)
2 cloves garlic
½ cup skim milk
4 oz fat-free cream cheese
½ Tbsp Dijon mustard
1 tub Signature Parmesan Peppercorn Dressing
1 cup shredded low-fat cheddar
1 tsp ground black pepper
2 Tbsp Italian flat-leaf parsley
Directions
1. Preheat oven to 375 degrees F.
2. Chop cauliflower and place in large bowl. Add 2 Tbsp water and microwave on high for 5 minutes. Let stand in microwave for 2 minutes.
3. Drain cauliflower and place in glass pan that has been coated with cooking spray. Bake for 15 minutes.
4. While cauliflower is in oven, coat large saute pan with cooking spray and place over medium-high heat. Add onions and garlic, cooking until tender.
5. Reduce heat to medium and add milk, mustard, and half of cheddar. Whisk in cream cheese, stirring until well-blended.
6. Add Parmesan Peppercorn Dressing, pepper, and parsley to cheese mixture, stir, and remove from heat.
7. Remove cauliflower from oven and mix in cheese sauce. Sprinkle remaining cheddar on top.
8. Return to oven and bake for 20-25 minutes.
Additional Notes:
- Spritz with Bacon Flavor Mist before serving for added flavor.
- Serve with grilled chicken breasts (boneless and skinless) to make a main course!
- If desired, substitute broccoli for the cauliflower.
