Spicy Shrimp & Green Beans Recipe

Here’s a recipe for a super simple, protein-packed meal that’s high on taste and low on calories.

16oz. Fresh Green Beans
2tsp. Olive Oil
1Tbsp. Minced Garlic
3/4tsp. Coriander
1tsp. Salt
1tsp. Ground Black Pepper
1/4tsp. Cayenne Pepper
1 Medium Lemon, Juiced
1tsp. Lemon Zest
12oz. Cooked Medium Shrimp


1. Preheat oven to 425 degrees.
2. Rinse green beans, pat dry and trim ends.
3. In a mixing bowl, combine olive oil, garlic, coriander, 1/2tsp. salt, 1/2 tsp. black pepper, and cayenne pepper.
4. Toss green beans in bowl, mixing well.
5. Coat roasting pan with cooking spray and pour in green bean mixture.
6. Roast for 12 minutes.
7. While green beans are roasting, mix lemon juice, zest, remaining salt and pepper, and shrimp in a bowl.
8. Take green beans from oven, stir, and arranged shrimp on top. Roast an additional 8-10 minutes.

Try substituting asparagus or broccoli for the green beans if preferred.

Look in your grocer’s seafood department for cooked shrimp.
