Chicken & Raspberry Salad Recipe

Raspberries are a rich source of nutrients, minerals and vitamins. Some studies even suggest that this deliciously delicate berry can even help lower your risk of cardiovascular disease. Paired up with a lean protein and a flavorful dressing, this salad is sure to please the palate!

1/4 cup J.M. Smuckers® Light Sugar Free Red Raspberry Preserves
2 Tbsp extra virgin olive oil
1 Tbsp white wine vinegar
1 tsp Dijon mustard
1/8 tsp salt
1 tsp black pepper
2 Tbsp minced scallions
1 cup fresh raspberries
4 cooked, boneless, skinless chicken breasts halves, cut into 1 inch pieces
4 cups chopped Bibb lettuce

1. In a medium size bowl, whisk the first 6 ingredients together. Add the scallions, raspberries and chicken to the vinaigrette. Toss to combine.
2. Arrange the lettuce on individual plates. Spoon chicken mixture over the lettuce just before serving.
